Looking for a delicious way to eat every part of the fish? When we fillet halibut, we keep the collar! This is a large section of the neck of the fish that is removed before filleting. You’ll find pockets of dense and nutrient rich meat inside. Another finger food option for fish loving foodies!

The meat in the collar is slightly different than a fillet. Some compare it to chicken, or scallops in the way it’s somewhat stringy.

The image below shows pan braised collars in olive oil, salt, pepper, capers, and fresh lemon juice. Yum!

Collars vary VASTLY in size. We bag them in 1-3 pound bags on average, so you may find a 3 pound bag with four collars in it, or, one 4 pound collar in one bag. Give em’ a try - the more you buy the more you save. Load up with selenium, omega-3’s, vitamin D (especially now that winter is coming), and lean protein.
