King Salmon Steaks with Orange-Avocado Salad
The bright and fruity orange flavors along with smooth avocado are the perfect compliment to a delicious king salmon steak.
Ingredients:
Juice and zest of 1 navel orange
2 Tbsp olive oil
1 Tbsp minced red onion or shallot
1/2 Tbsp honey
1 tsp fresh minced garlic
1 tsp fresh grated ginger root
1/4 - 1/2 tsp red pepper flakes
salt - to taste
2 ~ 1/2 lb king salmon steaks
For the Orange & Avocado Salad:
3 cups spring salad mix, lettuce, or arugula
1/2 - 1 avocado, pitted & thinly sliced
1 navel orange - peeled & segmented
1/4 cup tasted & smashed walnuts or pecans (optional)
Directions:
Blend the first 8 ingredients until mixed. Reserve half for the salad. Pour the other half into a zip top bag. Rinse and pat dry the king salmon steaks, add to the bag with dressing. Turn the bag several times to coat the fish. Allow to marinate for 20-30 minutes.
Heat your grill to medium-high (about 400 degrees), or a skillet to medium-high. Remove the salmon from the bag and place on a well-oiled grill or pan. Cook 10 to 15 minutes, or until the salmon is JUST opaque throughout. If it begins to split - you know it’s done! Remember - the steak will continue cooking for a couple of minutes after removed from heat.
Divide the salad mix, avocado, & orange segments evenly onto two plates. Top each salad with a steak and drizzle the remaning dressing over the steaks & salad. Garnish with nuts (optional).
